Ingredients

For the Chicken

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • 1 tablespoon lemon juice optional for marinating

Optional Garnish

  • Fresh parsley
  • Lemon wedges

Instructions

Prep the Chicken

  • Pound chicken breasts lightly to even thickness. Pat dry with paper towels.

Season

  • Brush both sides with oil. Sprinkle salt, pepper, garlic powder, paprika, and onion powder evenly.

Preheat the Blackstone

  • Heat the griddle to medium-high (375–400°F). Add a drizzle of oil.

Cook the Chicken

  • Place chicken on the hot griddle. Cook for 5–6 minutes per side until golden with grill marks.

Check Temperature

  • Remove when internal temperature reaches 165°F (74°C).

Rest and Serve

  • Let rest for 5 minutes. Garnish with parsley or a squeeze of lemon.

Notes

  • For extra moisture, marinate chicken for 20–30 minutes before cooking.
  • Use avocado oil for high-heat searing.
  • Thin chicken cooks faster; thick pieces may need a few extra minutes.
  • Carryover cooking will raise temperature slightly—don’t overcook.
