Chicken
- 3 –4 chicken breasts or 6 thin cutlets
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil
- 2 tablespoons butter
Mushrooms & Sauce
- 2 cups sliced mushrooms button or cremini
- 1 small onion thinly sliced
- 3 garlic cloves minced
- 1 cup chicken broth
- 1 cup heavy cream
OR
- 1 can cream of mushroom soup classic version
- 1 teaspoon paprika
- 1 teaspoon dried parsley
- 1/2 teaspoon thyme optional
Cheese
- 6 –8 slices of mozzarella or provolone
- Optional: 1/4 cup grated Parmesan
Season & Sear the Chicken
Season chicken with salt, pepper, and garlic powder.
Heat olive oil and butter in a skillet.
Sear chicken 3–4 minutes per side until lightly golden (it will finish cooking in the oven).
Transfer to a baking dish.
Sauté Mushrooms & Aromatics
In the same skillet, add mushrooms, onion, and garlic.
Cook 5 minutes until golden and fragrant.
Make the Sauce
Stir in chicken broth and cream (or mushroom soup).
Add paprika, parsley, and thyme.
Simmer 2–3 minutes until slightly thickened.
Serve
Garnish with fresh parsley.
Serve warm over rice, mashed potatoes, pasta, or with crusty bread.
