Chicken & Broth
- 1 lb chicken thighs or breasts
- 6 cups chicken broth
- 1 onion sliced
- 3 –4 garlic cloves minced
- 2 –3 inches fresh ginger sliced
- 2 tablespoons soy sauce or tamari for gluten-free
- Salt & pepper to taste
Noodles & Add-Ins
- 6 oz bean thread noodles long rice noodles
- 1 cup sliced green onions
- Optional: sliced mushrooms
- Optional: bok choy or napa cabbage
Boil the Chicken
