- 1 ½ lbs boneless skinless chicken thighs
- 2 tbsp olive oil
- 2 chipotle peppers in adobo sauce minced
- 2 cloves garlic minced
- 1 tsp smoked paprika
- 1 tsp cumin
- ½ tsp oregano
- ½ tsp salt or to taste
- Juice of 1 lime
- Fresh cilantro for garnish
Prepare the marinade: In a small bowl, mix chipotle peppers, garlic, paprika, cumin, oregano, and salt.
