Ingredients
  

  • 1 ½ lbs boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 2 chipotle peppers in adobo sauce minced
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp oregano
  • ½ tsp salt or to taste
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions
 

  • Prepare the marinade: In a small bowl, mix chipotle peppers, garlic, paprika, cumin, oregano, and salt.
  • 👉 Tip: Add 1 tbsp adobo sauce for extra smoky heat.
  • Cook the chicken: Heat olive oil in a skillet over medium-high. Add chicken thighs and cook for 6–8 minutes per side until golden and cooked through (internal temp 165°F / 74°C).
  • 👉 Tip: Don’t overcrowd the pan for the best sear.
  • Finish with lime: Squeeze fresh lime juice over the chicken.
  • Serve & garnish: Sprinkle with cilantro and serve hot with rice, tortillas, or roasted veggies.

Notes

  • For extra smoky flavor, grill the chicken instead of pan-searing.
  • Leftovers can be stored in the fridge for up to 3 days
