Ingredients
  

  • 3 cups cooked chicken shredded or diced
  • 6 cups crumbled cornbread homemade or store-bought
  • 1 cup chicken broth plus more if needed
  • 1 medium onion finely chopped
  • 2 celery stalks finely chopped
  • ½ cup unsalted butter melted
  • 2 large eggs lightly beaten
  • 1 can 10.5 oz cream of chicken soup
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried sage or poultry seasoning
  • ½ teaspoon thyme optional
  • Optional: ½ cup chopped green onions or parsley ¼ cup milk or cream

Instructions
 

  • Preheat Oven: Set to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Sauté Vegetables: In a skillet, melt butter and cook onion and celery for 5–7 minutes until soft and fragrant.
  • Mix Base: Combine cornbread, chicken, and sautéed vegetables in a large bowl.
  • Add Wet Ingredients: Stir in cream of chicken soup, eggs, broth, and seasonings. Adjust moisture if needed.
  • Bake: Pour into the baking dish and bake uncovered for 40–45 minutes until golden brown and set.
  • Serve: Let rest 10 minutes, then serve warm with gravy or roasted meats.
