Ingredients
  

For the Chicken:

  • 1 ½ lbs chicken thighs or breasts cut into pieces
  • 1 tablespoon oil
  • Salt & pepper to taste

For the Ginger Sauce:

  • 3 tablespoons soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 –3 tablespoons fresh ginger grated
  • 3 garlic cloves minced
  • ½ cup chicken broth
  • 1 tablespoon cornstarch mixed with 2 tbsp water slurry

To Serve:

  • Sliced green onions
  • Cilantro
  • Steamed rice or noodles

Instructions
 

Prep the Chicken

  • Season chicken with salt and pepper.

Sear the Chicken

  • Heat oil in a skillet. Add chicken pieces and cook until browned on all sides, about 5–7 minutes.

Make the Ginger Sauce

  • In a bowl, whisk soy sauce, honey, ginger, garlic, vinegar, sesame oil, and chicken broth.

Simmer the Chicken

  • Pour sauce into the skillet. Stir and let simmer for 5 minutes.

Thicken the Sauce

  • Add the cornstarch slurry. Cook another 2–3 minutes until the sauce becomes glossy and thick.

Serve

  • Garnish with green onions and cilantro. Serve over rice or noodles.

Notes

  • Add chili flakes or sliced red chili for heat.
  • Chicken thighs give the juiciest results.
  • Replace honey with monk fruit for a low-carb version.
  • Add vegetables like bok choy, broccoli, or snap peas.
