Ingredients
  

  • 1 lb lean ground beef 85–90%
  • ½ medium head green cabbage chopped
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 medium carrot shredded
  • 2 tbsp olive oil
  • 2 tbsp soy sauce or coconut aminos
  • 1 tbsp tomato paste
  • ½ tsp smoked paprika
  • ¼ tsp chili flakes optional
  • Salt and black pepper to taste
  • Green onions or parsley for garnish

Instructions
 

  • Brown the Beef: Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart with a spatula. Drain if needed.
  • Add Aromatics: Stir in onion and garlic. Sauté for 2–3 minutes until fragrant and slightly golden.
  • Season the Mixture: Add tomato paste, soy sauce, smoked paprika, and chili flakes. Stir well to coat evenly.
  • Add Vegetables: Stir in shredded carrot and chopped cabbage. Cover and cook 8–10 minutes, stirring occasionally, until cabbage is tender but not mushy.
  • Finish & Serve: Adjust seasoning with salt and pepper. Garnish with green onions or parsley. Serve warm over rice or quinoa.

Notes

  • Use a large pan to allow cabbage to sauté instead of steam.
  • Don’t overcook — keep cabbage slightly crisp for the best texture.
  • Add a drizzle of honey or extra carrots for natural sweetness.
