- 1 lb 450 g ground beef
- 1 cup uncooked long-grain rice white or brown
- 1 medium onion chopped
- 2 garlic cloves minced
- 1 bell pepper diced (any color)
- 1 can 14 oz / 400 g diced tomatoes or tomato sauce
- 2 ½ cups beef broth or chicken broth
- 2 tbsp olive oil or butter
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp salt adjust to taste
- ½ tsp black pepper
- Optional: shredded cheese chopped parsley, lime wedges
Brown the Beef – Heat olive oil in a large skillet or pot over medium-high heat. Add ground beef, season lightly with salt and pepper, and cook until browned.
Add Aromatics – Stir in onion and garlic; cook until fragrant. Add diced bell pepper and sauté until slightly softened.
Stir in Tomatoes & Spices – Mix in diced tomatoes and seasonings (paprika, cumin, extra salt/pepper if needed).
Add Rice & Broth – Stir in rice until coated, then pour in beef broth. Bring to a gentle boil.
Simmer – Reduce heat to low, cover, and cook 18–20 minutes (longer if using brown rice) until rice is tender and liquid is absorbed.
Finish & Serve – Fluff with a fork, adjust seasoning, and top with cheese, parsley, or lime juice before serving.
