- 1 lb ground beef
- 1/2 cup chopped onion
- 2 cloves garlic minced
- 1/2 cup chopped bell peppers any color
- 1 cup cauliflower rice fresh or frozen
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 1/4 cup cream cheese
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt or to taste
- 1/4 tsp black pepper or to taste
- 2 tbsp olive oil for cooking
- 1/4 cup fresh parsley for garnish, optional
Preheat your oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat and cook ground beef until browned, breaking it up with a spoon. Drain excess fat and set aside.
In the same skillet, add more olive oil and sauté onion, garlic, and bell peppers for 4-5 minutes.
Add cauliflower rice and cook for 3-4 minutes.
Stir in the cooked ground beef, followed by heavy cream, cream cheese, paprika, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
Transfer the mixture to a greased 9x9-inch casserole dish and top with shredded cheddar cheese.
Bake for 15-20 minutes until the cheese is melted and bubbly.
For a crispy top, broil for the last 1-2 minutes.
Garnish with fresh parsley and serve warm.
