Roast Beef Sliders Recipe

These roast beef sliders are the ultimate crowd-pleasing, pull-apart appetizer or easy weeknight dinner. Made with soft Hawaiian rolls, thin-sliced roast beef, melted cheese, and a buttery garlic-herb glaze, these sliders bake up golden, gooey, and irresistibly delicious.

Ingredients
  

For the Sliders

  • 1 package Hawaiian slider rolls 12 rolls
  • 1 pound thin-sliced roast beef deli-style or leftover roast beef
  • 12 slices provolone Swiss, or cheddar cheese
  • 1/2 cup caramelized onions optional but recommended

For the Butter Glaze

  • 4 tablespoons unsalted butter melted
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley or Italian seasoning
  • 1/2 teaspoon black pepper
  • 1 teaspoon sesame seeds optional for topping

Instructions
 

Prep the Rolls

  • Preheat oven to 350°F (175°C).
  • Slice the entire pack of Hawaiian rolls horizontally without separating them.

Add Cheese Layer

  • Place the bottom half of the rolls in a baking dish and add a layer of cheese.

Add Roast Beef

  • Pile the roast beef evenly across the rolls. Add caramelized onions if using.

Add Second Cheese Layer

  • Place an additional layer of cheese on top of the beef.

Replace the Roll Tops

  • Put the top half of the Hawaiian rolls back on.

Make the Butter Glaze

  • Mix melted butter, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, parsley, and pepper.

Brush the Glaze

  • Brush the butter mixture generously over the roll tops. Add sesame seeds if desired.

Bake

  • Cover with foil and bake for 10 minutes.
  • Remove foil and bake another 5 minutes, or until golden and the cheese is melted.

Serve

  • Slice into individual sliders and serve warm.

Notes

  • Add a layer of horseradish mayo or spicy aioli for extra flavor.
  • These sliders can be made ahead and baked before serving.
  • Substitute roast beef with turkey, ham, or pulled chicken.
  • For extra meltiness, use both provolone AND mozzarella.
  • Sliders reheat well in the oven or air fryer.
